17 days and counting
The Dark days before SB. It never fails that in the days - well weeks- before spring break, you just long for a break. Today I was on campus from 9am-7pm and it was ridiculous. But I am just longing for that break. This semester has been pretty tough and though none of the work is un-do-able...it's just never ending it seems. I am just simply going home this year for spring break (since I went to Cali for the national championship my personal trip fund is negative)
I am honestly really excited to just lay low and read at least one of the books that have been sitting on my night stand since last summer. I literally have no time between classes, work, and spending time at two different schools. I just want to put my toes in the sand and read - not to mention gain a little color because lordy lordy I am pasty and its getting a little disgusting!
It's okay, I think I can make it....only 17, well actually 16 days away!

Caffeine Cleansing
I have recently (well in the past couple months or more) realized that I am quite addicted to caffeine which is weird to me because growing up I never drank soda. It was not until I was in high school and began going out to eat and what not with friends and I really picked up the act. Then since I have been at college...this below is my weakness...
I also like diet dr. pepper and diet mountain dew! I cant help it but I really like them and i crave them. If i dont have at least one intake of caffeine a day then I tend to get a headache and i attempt to fight it butttt I know that i can heal it with just one diet coke, so i always give in. But not anymore...today I bought this at the store...

Superbowl Cupcakes
I made a new cupcake recipe for the superbowl this past weekend. I am a large colts fan but also a good sports fan so i made cupcakes favoring both teams!!
They were a white cake batter and brownie cupcakes along with a homemade whipped cream cheese frosting! I am not going to lie, they were pretty tasty and probably be my go to cupcake recipe for a while.
Also, really liked the icing because it was very light and fluffy but also had that yummy cream cheese taste!
Most of the reports from the taste testers were good...so expect to see these again!
All the cupcakes together....although, careful with the dark colored icing because it will often dye the teeth and mouth!

Win/Win situation
This weekend is the 44th annual superbowl and I am pretty pumped about it. The colts are my FAVORITE NFL team for many reasons...i love Peyton Manning (shown above), I think they are a classy organization, I love Tony Dungy (yes I know he is no longer coaching) but I feel like Jim Caldwell is a great student of his. I just thoroughly like them. Thus I am cheering for them this weekend and I will be wearing my Peyon Manning jersey with pride on sunday!! Woohoo...Go Colts!!!
Isn't he loveable...I think the Manning family is wonderful role models in the world of sports and the only...and ONLY issue that I have with him is that Peyton went to Tennessee. But I am a forgiving person and will look that past that issue. But I thought this pic was couldnt and I mean how couldnt you cheer for that. He is practically one of the greatest quarterbacks...EVER
Well the Colts will be playing the Saints this weekend (Who Dat) and honestly I would pull for the saints and hope the best for them if they were playing any other team..and really any other team. I think they are a great team and definitely have the great story behind them. I think Drew Brees is also a great guy (just watched an interview with him on morning tv) and he has done good things. I hope the best for him...But i shall never turn my back on Peyton and the Colts! But in some weird way I guess the superbowl for me is a win/win situation and i think it will be a great game considering they are the two best teams with great players and coaches.

Paula, Paula, Paula
These are some pictures of a wonderful Paula Dean recipe from her Christmas magazine. I love Paula, but i am nothing the cook she is... Needless to say i made this cake the first time and failed miserably and when i say miserably i mean the cake cracked in all places, the icing was the completely wrong consistency...it was just ugh, embarassing and tarnish to Paula's name.
What I learned here was that baking is an art and an exact science..when they want soft butter they just want soft butter not melted (for example)
but I refused to let this this cake bring me down...So the very next day, I made it again and this is what came from it! I was very proud and excited that it stayed in one peice and looked "somewhat" like the pic in the recipe.
Oh yeah, its Chocolate cake with a peanut butter frosting..just FYI
The Teaching Experience
I have literally been around the education system all of my life - yes i did attend school all of my life- but more than that. I come from a family of educators and if you do not believe me i can practically name on two hands the members of my immediate/distant family who have NOT at on point or another worked in the schools some way or how.
Well, so i naturally am going to school to be a teacher...shocker i know. I would like to teach secondary history! I was in no way pressured by family to pursue this profession but instead they didn't need to convince me, i was sure of it myself. I was able to witness through all of them the joys and even pitfalls of teaching but more than anything it seemed in every situation that the joys outweighed anything bad. I had incredible teachers in high school that inspired me not only to have a passion and desire to learn but also showed me exactly what type of teacher i would like to be one day be.
I am technically in my junior year of college thanks to the lovely IB program in high school and thus i am starting to have to do "real" teacher stuff! This semester i have to collect twenty hours tutoring/helping at a middle school along with 34 hours at a high school where i will be observing/helping/and teaching in a US History class...thats correct i said TEACHING along with video taping that teaching so I can THEN watch myself and critique it. Doesnt that sound like a ball of fun? I am very excited to learn, observe, and help but sooo nervous to make lesson plans and teach. They gradually throw you into it with only a little actual teaching this semester and more next semester to where this time next year i will be on my OWN student teaching...WHAT? next year...i cannot believe that!
But anyway...Tuscaloosa County High school and Ms. Douglas' class, Here I come!!
